  1. In a stand mixer with the paddle attachment, or using a hand mixer, cream the butter and sugar until combined, about 2 minutes, scraping down the bowl as needed.
  2. Add the egg yolk, vanilla & almond extracts and beat for 1 minutes, scraping down the bowl as needed.
  3. Add the flour, baking powder, salt, ground cardamom, and milk. Mix until combined, then switching to a spatula to ensure everything comes together. The dough will be crumbly.
  4. Lay out a large piece of plastic wrap and drop the dough onto it. Wrap it up and use your hands to shape it into a disc. Transfer to the fridge to chill for at least one hour.
  5. Once ready to roll, line Little Sheet with parchment paper.
  6. Generously flour your surface and rolling pin (this will help keep your dough from tearing), then roll out the dough until it is 1/4 inch thick. Move the dough around to ensure it’s not sticking.
  7. Use the cookie cutters to shape your cookies and transfer them to Little Sheet leaving a 1-inch gap in between.
  8. Collect the dough scraps as needed into a ball to re-roll and shape 6 cookies.
  9. Chill the cookies for 15 minutes in the fridge while you preheat the oven to 350F.
  10. Bake the cookies for 10 minutes until just slightly golden at the edges.
  11. Transfer the cookies to Little Chill to cool completely.
  12. Once ready to decorate, melt the chocolate chips in a microwave safe bowl in 20-second intervals. Transfer the melted chocolate to a small ziplock bag and cut a small hole at the corner.
  13. Drizzle the chocolate over the cookies and decorate with sprinkles.
  14. Allow the chocolate to set at room temperature or in the fridge before serving.
