- In a stand mixer with the paddle attachment, or using a hand mixer, cream the butter and sugar until combined, about 2 minutes, scraping down the bowl as needed.
- Add the egg yolk, vanilla & almond extracts and beat for 1 minutes, scraping down the bowl as needed.
- Add the flour, baking powder, salt, ground cardamom, and milk. Mix until combined, then switching to a spatula to ensure everything comes together. The dough will be crumbly.
- Lay out a large piece of plastic wrap and drop the dough onto it. Wrap it up and use your hands to shape it into a disc. Transfer to the fridge to chill for at least one hour.
- Once ready to roll, line Little Sheet with parchment paper.
- Generously flour your surface and rolling pin (this will help keep your dough from tearing), then roll out the dough until it is 1/4 inch thick. Move the dough around to ensure it’s not sticking.
- Use the cookie cutters to shape your cookies and transfer them to Little Sheet leaving a 1-inch gap in between.
- Collect the dough scraps as needed into a ball to re-roll and shape 6 cookies.
- Chill the cookies for 15 minutes in the fridge while you preheat the oven to 350F.
- Bake the cookies for 10 minutes until just slightly golden at the edges.
- Transfer the cookies to Little Chill to cool completely.
- Once ready to decorate, melt the chocolate chips in a microwave safe bowl in 20-second intervals. Transfer the melted chocolate to a small ziplock bag and cut a small hole at the corner.
- Drizzle the chocolate over the cookies and decorate with sprinkles.
- Allow the chocolate to set at room temperature or in the fridge before serving.
