General
We designed our collection with the support of some of the top leaders in food in America, including Momofuku's David Chang and Sqirl’s Jessica Koslow. We studied, custom-built, and stress-tested the curves and slopes of our cookware (so food doesn’t get trapped), the grips of our handles (ergonomics!), and the distribution of heat (even, steady). We also think it looks as good sitting on your stove as it feels in your hands; cookware shouldn’t be relegated to underneath your sink. There’s a reason behind every design decision we made, and you can find more information on each product detail page.
The name Great Jones is a nod to Judith Jones, a cookbook author and editor who championed and published the work of Julia Child, Edna Lewis, James Beard, and many others. She died in 2017 at age 93. It’s also a reference to New York, where we’re proud to both live and build our business.
We want to help you pare down clutter in your kitchen and focus on the pieces you actually need to cook at home — not what you necessarily need to be a professional chef (but dream big!). To set yourself up for success, you’ll want a mix of materials: enameled cast iron, stainless steel, and ceramic nonstick. Our Family Style collection, which costs $550, covers all these bases. But we realize that everyone’s needs are different; if you’re only scrambling eggs, you may only need the Small Fry. Let us know when you graduate to braising! We’re here to help you figure it all out.

Our co-founders designed Great Jones in New York and vetted cookware factories all over the world when deciding where to manufacture. Our products are manufactured in China, Vietnam, Taiwan, India, and the U.S.
Small Fry, Large Fry, Deep Cut, Saucy, and Big Deal are all made of nonreactive stainless steel, so you can cook whatever butters your bread (even if that’s just butter and bread) without worrying about our cookware impacting flavor. Also, all of these products have an aluminum core, ensuring heat distributes evenly (so one side of your steak isn’t rare while the other is well done). The handles and knobs are stainless steel; they’re crafted to dissipate heat.
The Small Fry, Large Fry, Holy Sheet, and Little Sheet have a nonstick ceramic coating (no Teflon!).
The Dutchess and Dutch Baby are made of cast-iron enamel. Cast iron gets — and stays — quite hot, and the enamel makes it easier to clean and care for (no need to season it!). For the interior enamel, we chose gray. The color is light enough to allow you to see butter browning, but dark enough to resist stains.
King Sear is also made of cast-iron. We’ve pre-seasoned King Sear for you, meaning that it’s nonstick from day one, easy to clean, and requires minimal maintenance.
Patty Cake, Breadwinner, and Stud Muffin are made of aluminized steel and our custom nonstick ceramic coating — the same found in Holy Sheet and Little Sheet. The wavy, corrugated bottom releases baked goods effortlessly and resists scratching.
Hot Dish, Little Hottie, and Sweetie Pie are made out of ceramic (specifically, stoneware), allowing them to travel safely from freezer to oven and withstand heat up to 450 degrees F. Stoneware conducts heat slowly, giving a gentle, even bake. And unlike a glass dish, you can use these products under the broiler.
Our stainless pieces contain trace amounts of nickel.

Cookware
When we call our stainless pieces “fully clad,” we’re referring to the way they’re built. Between the exterior stainless-steel layers is an aluminum core. This core travels up the sides of each pan and helps distribute heat across the entire surface, so your food heats up and cooks evenly.
Fully clad stainless steel is durable and excellent at evenly retaining heat. It can handle high-temperature cooking, which is helpful if you're making something that needs to cook on both the stove and in the oven. Also, because our stainless pieces can get so hot, they're great for making things crispy and developing those little brown specks of flavor on the bottom of the pan (called "fond"). Stainless does require more cleaning time than nonstick, but we promise the difference in flavor makes it worth the effort.
Nonstick pans, like the Small Fry, are best for cooking foods you absolutely don't want to get stuck to your skillet. Our nonstick ceramic coating is built to last, but nonstick pans do need to be replaced more frequently than stainless ones.

They are designed without PTFE and PFOA chemicals! Our manufacturing process does not involve adding this substance to the product, which may otherwise be present in the environment.
Yes and yes! Each piece of cookware is designed purposefully to be used in and on all cooking surfaces, including induction cooktops and ovens.

We specifically designed our signature handle, which is made of stainless steel, to dissipate heat. The custom, contoured shape makes it stay as cool as it looks, and we did extensive testing to ensure this.
That said, the handles do get hot if you’re putting Great Jones cookware in the oven, in which case you should reach for an oven mitt or pot holder. You should do the same when holding our lid or helper handles over high heat.

Our King Sear is enameled cast-iron for minimal maintenance! Our cast-iron skillet does not need to be seasoned prior to first use. To maintain the nonstick over time, we recommend occasionally seasoning your cast-iron skillet. Dry your skillet thoroughly, rub vegetable oil or fat over the interior surface, and place it in an oven at low heat for the oil to seep in.
Bakeware
We designed our bakeware to perform in and out of the oven. Holy Sheet, Little Sheet, Breadwinner, Patty Cake, and Stud Muffin — all made of aluminized steel with a ceramic nonstick coating will evenly bake your pastries without warping. The corrugated bottom found in Breadwinner and Patty Cake releases cakes and bread effortlessly.
Hot Dish is outfitted with our signature oversize Dutchess handles, which are easy to grab with an oven mitt. Hot Dish, Little Hottie, and Sweetie Pie can withstand oven heat up to 450 degrees F and bake to a perfectly even, golden brown, due to the ceramic stoneware material. And Sweetie Pie’s wide, wavy rim will help guide your crust crimping.
But the designs aren’t just incredibly functional, they’re cute as hell, too! We recommend serving directly out of our bakeware — or gifting your pal a homemade pie inside Sweetie Pie for the ultimate treat.

We do not recommend using Hot Dish or Little Hottie on your stovetop. The direct heat can shatter ceramic.
Absolutely! Unlike glass dishes, ceramic is safe to use under the broiler. In fact, we encourage you to give it a try. The toasty bits on top of a casserole are the best part.
Need to warm up leftover pie? Go for it. Sweetie Pie is microwave-safe.
Yes, you can! Though we recommend you avoid using it under the broiler, as the close contact to high heat may cause damage.
We diversified our pool of suppliers for this product, which resulted in a very slight size difference. Don’t worry, the pans are the same you know and love and function exactly the same!

Our wooden utensils are only available for purchase as a complete set. The set was designed to cover all of your stirring, scooping, and serving needs.
Before you begin, wash utensils with soap and water. Wipe dry with a soft dish towel. Rest utensils on a spoon rest, rather than in the pan, while cooking.
Wood cooking utensils are not dishwasher-friendly, so please give them a sudsy hand wash with a gentle dish soap and soft sponge. Wipe dry with a soft dish towel.

Why does my EKG screen read "No Water" when it is filled?
This is a known issue that Fellow is working to understand. We've learned this can happen if the kettle is submerged in water (or if one of the connector pieces is exposed to water).
If this is the case, the majority of customers have reported that leaving the kettle and base apart to completely dry for a few days remedies the issue. We'd recommend removing the lid of the kettle and placing the kettle upside down on a cloth for 2-3 days.
Why is the display flashing on my EKG?
A flashing display indicates that the heating element is disengaged and the kettle is not heating (i.e. the kettle is "idling"). This happens when the hold switch is turned off, the kettle reaches the selected target temperature, and either:
1. The kettle sits for 5 minutes
OR
2. The kettle is removed from the base
If you'd like the kettle to return to the target temperature when you place it back on the base or maintain the target temperature for more than 5 minutes, turn the hold switch on. Otherwise, when the screen flashes, the target temperature must be re-selected while the kettle is not seated on the base.
With the hold function enabled, the Stagg EKG maintains the target temperature for 60 minutes. When the kettle is removed and placed back on the base, it will register a drop in temperature and begin to re-heat to the target temperature. After 60 minutes, the heating element disengages and the kettle will idle for 15 minutes before turning off (i.e. the screen shuts off).
Why is the dial on my EKG base sticky?
If you find the dial on your EKG is sticky or not rotating as smoothly as it once was, there's a good chance something has become stuck beneath it. Fortunately, you can remove the knob and clean underneath, removing what is obstructing the path of the dial.
1. With a flat object (butter knife, flathead screwdriver, etc.), slowly pry between the dial and the base. Once the flat object is in place, gently turn it until you feel the dial give.
2. Remove the dial to reveal the internal spring (note how the spring is positioned).
3. Remove the spring and clean the dial and base with a cotton swab dipped in rubbing alcohol.
4. Place the spring back in place and line up the bottom of the dial to re-attach it to the base.
How do I clean the Stagg/Corvo EKG Electric Kettle?
Please use the following steps to clean your Stagg or Corvo EKG:
• Prior to cleaning, be sure the base is unplugged and the kettle has cooled completely. Empty any remaining water from the kettle.
• Wash the inside of the kettle with soapy water and rinse. NEVER SUBMERGE THE KETTLE IN WATER OR OTHER LIQUIDS.
• Do not place in a dishwasher. Neither base nor kettle is dishwasher safe and both include electrical components that could become damaged.
• Wipe the exterior of the kettle and base with a damp cloth or sponge and allow it to dry. Do not use abrasive soaps, cleansers, or scouring pads on any part of the kettle as it may damage the finish.
Calcium, Limescale, and Rust
Over time, the kettle may heat up but won’t boil; this may be due to scaling and mineral deposits that can build up inside the kettle. If you notice a stain on the bottom of your kettle's interior that resembles rust, don't worry. It's likely not rust, but a harmless buildup of minerals called limescale (comprised of mainly calcium carbonate). Limescale is a direct result of heating up water and thus inevitable in all kettles. Depending on the mineral concentration in your water, it will show up sooner or later.
To get rid of limescale, mix a 1-to-1 solution of water and white vinegar (250 mL of each) and pour it into your kettle. Let it sit overnight and in the morning, heat your kettle to a boil for 5 minutes (turn the hold switch off if it's on) and let sit for at least another half-hour. Afterward, rinse out the kettle with fresh water to get rid of residual vinegar. If you notice lingering traces of vinegar, fill your kettle and add a tablespoon of baking soda before heating again. Baking soda does a good job of neutralizing the scent of vinegar and will also help remove stubborn limescale stains.
If limescale stains remain after this process, citric acid is a more powerful, and safe, alternative to vinegar and should remove any residual limescale.
Caution: Scrubbing the bottom of your kettle with steel wool or an abrasive brush will ultimately make limescale worse and could also result in the development of rust. Please use a sponge or soft brush to clean the inside of your kettle.
Can I heat milk or other liquids in the Stagg/Corvo EKG Electric Kettle?
The EKG line of kettles was designed to be an incredibly efficient water heater/boiler. The software and hardware are crafted to be sure you have the best experience possible with water only.
Even if it is set at a lower temperature, the heating cycle is so rapid it could scald milk and other liquids. Please don't use the EKG with milk or any liquid other than fresh, clean water. Doing so will void your warranty.

Can I purchase additional hooks? We don’t sell additional hooks, but you can purchase any peg hook styles ¼” in diameter spaced 1” apart.
What is the maximum weight limit the pegboard can carry/support? Each hook can carry up to 22 lbs and each board can carry up to 300 lbs when mounted correctly.
Is the pegboard magnetic? Yes! And we actually include TK magnets in each box.
How do I clean my pegboard? Light soap and water - dry completely.
How many GJ pans does a single pegboard fit? 2-4
Is the pegboard renter-friendly? Absolutely. Mounting the pegboard is akin to hanging artwork! You can easily uninstall as needed, leaving behind a small screw hole (that can be easily patched with spackle).
Can I use the pegboard in other areas of my home? 100%! The Pegboard Set system is infinitely customizable and can be styled to store and display whatever you like.
